This black pepper is collected in the gardens of Sarikei from unique plants of the famous Kuching varietal in existence for more than 35 years in the state of Sarawak in Borneo. Perfectly ripe, fresh pepper berries are mixed with clean, cold water, then dried in a rudimentary oven at 180 degrees for 14 hours. The pepper is left intact, which gives it a special sweet scent. The entire process, which is carried out in Malaysia exclusively by Mr. Siew, is completed within 24 hours of collection and is unprecedented anywhere in the world.
